Recipe: Homemade Pancakes From Scratch

I can't remember where we found this recipe, but it's been a staple for a long time around here. We used to do the pre-made mixes, but most of them have allergy warnings for nuts (Clara is allergic).

We've (I use "we" very loosely...hubby is the pancake expert around here)...Anyway we've found this recipe to be very versatile. We've added whole wheat flour when we feel like it, and they still turn out great with a little extra water or milk added.

Our family especially loves fruit mixed in. Give them a try!

2 cups flour
3 tsp. baking powder
1/2 tsp. salt
1 1/2 Tbs. sugar
2 cups milk
2 eggs

- Combine dry ingredients
- In separate bowl, combine milk and eggs
- Gently stir egg mixture into dry ingredients
- Heat 2 tsp. butter in frying pan or griddle (medium heat)
- Ladle mixture, cook, flip, and serve
- Makes 4 servings (doubles or triples easily)
